A youthful team with a mission: to reach the highest quality creating the ultimate gourmet experience. Luis Haller was raised in the Passeiertal Valley. He discovered his passion for cookery early in life and after completing his studies at the hotel management school in Merano, he worked at a number of restaurants and hotels, both in Italy and abroad. These include the Romantikhotel Stafler, Hotel Alpenroyal, Jöhri Talvo in St. Moritz, Döllerer’s Genusswelt in Golling, Almhof Schneider in Lech, Ristorante Arquade-Villa del Quar in Verona and the Restaurant Vendôme in Bergisch Gladbach.
Between 2007 and 2016, he was at the helm of the upmarket restaurant at the Relais & Châteaux Castel Fragsburg. From May 2016 onwards he ran the special restaurants at the FORST Brewery, including the FORST Pavillon and the Felsenkeller gourmet restaurant. Awarded one Michelin star in 2016 as well as 2 toques and 16 points by the Gault et Millau, Luis is a dedicated culinary craftsman. Utilizing only a minimum number of selected ingredients in each of his recipes, he always manages to come up with something entirely new. At the Schlosswirt, every patron is made to feel welcome and looked after. Luis Haller and his team look to create a pleasurable experience for their guests.
In October 2017 Luis Haller has been nominated "Chef of the Year 2018".
In November 2017 Luis Haller has been awarded with the Premio Godio 2017.
